Quinoa with grilled peppers
Herb enhanced quinoa dish, with piquant peppers, much loved by anyone who has eaten it!

Quinoa has all eight main amino acids so a useful source of protein and a good source of B vitamins, with some calcium and manganese.
Ingredients
- A red and a yellow pepper cut into long strips
- Olive oil/Butter
- 5 ozs Quinoa
- 1 medium onion – chop finely
- 2 cloves of garlic – crushed
- 1 bayleaf
- 2 tsp oregano
- 2 tabsp parsley fresh if poss
Instructions
- Put pepper strips in grill pan – drizzle them with olive oil and cook in preheated grill, approx 5 mins a side until starting to brown a little and go tender
- Rinse quinoa in fine sieve through cold water. Warm a little butter or oil in a pan and sauté onion and garlic til very soft. Add bayleaf, oregano and quinoa. Pour over ¾ pint of water and simmer for 8-10 mins or so till almost all liquid absorbed.
- Remove peppers from grill, stir into quinoa and onion mix along with the fresh parsley and serve.
